Cinnamon Vanilla Overnight Oats

Creamy rolled oats with vanilla and cinnamon, mixed the night before and topped with banana in the morning. No cooking required.

A few minutes with a spoon in the evening can take breakfast off the morning list. Rolled oats soften slowly in milk and yogurt, turning creamy without a saucepan. Cinnamon and vanilla give them enough flavor to need very little sweetening.

The mixture thickens as it sits, so keep a little extra milk for the final stir. Add banana at the last moment rather than leaving it in the jar overnight; it tastes fresher and keeps its color.

Ingredients

Method

  1. 01

Stir the oats, milk, yogurt, maple syrup, vanilla, cinnamon, and salt in a bowl until evenly combined. Scrape down any dry oats clinging to the sides. Divide between two clean lidded jars or containers, each holding at least 12 fluid ounces (350 ml).

  2. 02

Cover and refrigerate at 40°F (4°C) or below for at least 8 hours, or overnight, until the oats are soft and the mixture has thickened. The total time includes this 8-hour soak; active preparation takes about 10 minutes.

  3. 03

In the morning, stir each portion well. Add a splash of milk if you prefer a looser texture and taste before adding more syrup. Slice the banana and divide it over the two portions immediately before eating. Serve cold.

  4. 04

Keep the oat mixture refrigerated for up to 3 days, within the use-by dates of the milk and yogurt. Add fresh banana only when serving. Use rolled oats for this texture: steel-cut oats stay hard, while instant oats become much softer. For a dairy-free version, use oat milk and a thick plain dairy-free yogurt.
